What an extremolyte is
Some bacteria live in conditions that should destroy them — salt concentrations that would draw water out of any normal cell, temperatures that denature proteins. They survive by producing small protective molecules called extremolytes, which do not interfere with cellular chemistry but do stabilise the structures around them.
Ectoin, first identified in the halophilic bacterium Ectothiorhodospira halochloris, is the best characterised of these. It is now produced by fermentation rather than harvested.

How it differs from a normal humectant
A conventional humectant such as glycerin or hyaluronic acid attracts and holds water. Useful, but essentially passive — it increases the water content of the stratum corneum.
Ectoin works by a mechanism called preferential exclusion. Rather than binding water to itself, it organises water molecules into an ordered shell around proteins and cell membranes. That hydration shell stabilises the structures inside it, which is what allows the original bacteria to survive conditions that would otherwise denature their proteins.
